My favorite way of eating fresh tomatoes is to slice them thin, add a little sea salt and pepper and place between two toasted whole wheat slices of bread with a nice schmear of mayo. A nice fresh tomato sandwich.
If you’re feeling a bit saucy, add some fresh, whole basil leaves.
Although I agree with everyone on the caprese salad idea, my Dad’s twist involved arugula and cold pasta (toss the pasta alone with some lemon and olive oil.) Divine!
Make fresh guacamole :). Diced tomatoes, red onion, avocado, cilantro and maybe some jalapeno mixed with fresh lime juice and a dash of salt. Use pita or tortilla chips to dip :D. Hungry now!
Bread salad–big chunks of crusty bread tossed with about a half cup mixed herbs (basil, parsley, maybe chives), olive oil, lemon or lime, balsamic vinegar, sea salt, coarse black pepper, chunks of room temperature tomato. Let sit until it all soaks together.
I love tomatoes, especially from the farmers’ markets – fresher and usually FROM the farmers! Simple is best – sliced with a little olive oil, balsamic vinegar if you want, sea salt and freshly ground black pepper.
I’d make a caprese salad with those babies. Or maybe capellini pomodoro…
Bruschetta!
Second the Bruschetta.. Best. Thing. Ever. And don’t even waste your time with bread.. just eat it with a spoon!
I second the caprese salad idea! 🙂
You’re making me hungry!

Damn that looks good, but ZOMG, 4 tablespooons of butter…
Ha! That’s ‘cuz it’s by Paula Deen, the Butter Queen! I love her but I would be HUGE if I ate all her recipies!
How about margarine? That will make it more figure friendly.
Unequivocally, salsa.
They look delicious. I’d make a good salad with them. Got some mozzarella and olive oil and a little basil? Mmmm good.

I’ve got fresh basil in my garden right now.
Yeah, I think may have just drooled on my keyboard…

I like the caprese salad. I also love a good Greek salad with Feta, olives, red onions, and cucumber.
Homemade Bruschetta! MMMMM!
I’ve been into making roasted tomato and basil soup.
Drizzle with olive oil, and since you have fresh basil, chop them and sprinkle on top!
Make fresh salsa with green pepper, onions, jalapenos, cilantro, and guacamole!!
Gazpacho! That’s what I did with my market haul. Was a very refreshing start to dinner after a muggy metro ride home.
How do you make yours? That’s actually sounding really good right now…
I tried the Cook’s Illustrated creamy gazpacho recipe and it was good, but I prefer Jose Andres’ recipe from his cookbook Tapas http://projects.washingtonpost.com/recipes/2006/08/09/gazpacho-al-estilo-de-tichi-tichis-gazpacho/
I love broiled tomatoes with olive oil, sea salt, fresh cilantro and aged parm. cheese.
Baby spinach + tomatoes + strawberries + feta cheese = the quickest, yummiest salad you will ever eat. Bonus points if you add some avocado. Mmmmmmm.
Bread salad–big chunks of crusty bread tossed with about a half cup mixed herbs (basil, parsley, maybe chives), olive oil, lemon or lime, balsamic vinegar, sea salt, coarse black pepper, chunks of room temperature tomato. Let sit until it all soaks together.
I like to make a warm corn and tomato salad or slice them in half and melt fresh moz over them with oregano, basil, or thyme.
Salsa.
Grilled cheese with tomato.
An omelete.
Cut up tomatoes and green peppers, drizzle with olive oil and feta cheese cubes, microwave just until warm. Easy and quick Yummy!
